Marry Me Chicken Soup is a hearty and flavorful dish featuring shredded chicken, sun-dried tomatoes, rotini pasta, and a creamy tomato broth infused with garlic, basil, and Italian seasoning. This comforting soup combines tangy tomato paste with rich heavy cream and is finished with parmesan cheese for a delicious, satisfying meal.

Ingredients

Scale

Main Ingredients

  • 1 pound shredded chicken
  • 34 ounce sun-dried tomatoes, chopped
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced or pressed
  • 3 ounce tomato paste
  • 4 cups chicken broth
  • 1/4 cup fresh basil, chopped
  • 2 cups dry rotini pasta
  • 2 teaspoons Italian seasoning
  • 1/2 cup heavy cream
  • Salt & pepper, to taste
  • Parmesan cheese, for garnish

Instructions

  1. Prep Ingredients: Start by prepping all the ingredients including shredding the chicken, chopping the sun-dried tomatoes, dicing the onion, mincing the garlic, and chopping the fresh basil.
  2. Sauté Aromatics: In a large pot, sauté the diced onion and garlic over medium heat until they soften and begin to brown, developing deep flavors.
  3. Add Sun-Dried Tomatoes and Basil: Stir in the chopped sun-dried tomatoes and fresh basil; cook together briefly to meld their flavors.
  4. Incorporate Tomato Paste and Chicken: Add the tomato paste to the pot, cooking it with the other ingredients for about a minute. Then add the shredded chicken and pour in the chicken broth.
  5. Simmer the Soup: Bring the broth to a boil, then reduce heat to a simmer. Season with salt, pepper, and Italian seasoning, letting the flavors develop.
  6. Cook the Pasta: Add the dry rotini pasta to the simmering soup and cook for 10-12 minutes, or according to the pasta package instructions, until al dente.
  7. Finish with Cream and Seasoning: Once the pasta is cooked, turn off the heat. Stir in the heavy cream and adjust salt and pepper to taste for a rich and balanced finish.
  8. Serve: Ladle the soup into bowls and garnish with freshly grated parmesan cheese before serving.

Notes

  • Sautéing the onion and garlic until soft and browned enhances the soup’s depth of flavor.
  • Use fresh basil for a brighter, fresher taste than dried basil.
  • For a thinner soup consistency, reduce the amount of heavy cream or add more chicken broth.
  • If you prefer a spicier soup, add a pinch of red pepper flakes with the Italian seasoning.
  • Leftovers keep well refrigerated for 3-4 days and reheat nicely on the stovetop or microwave.
