  • 200 grams Green Beans (broccoli or asparagus are good substitutes)
  • 2 cups Steamed Rice (quinoa is a healthy alternative)

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (180°C fan-forced) to prepare for baking the chicken.
  2. Brown Chicken: In an ovenproof pan, heat oil over medium-high heat and brown the chicken thighs for about 4 minutes on each side until golden and crispy.
  3. Sauté Garlic: Add minced garlic to the pan and sauté for about 30 seconds until fragrant, stirring constantly to avoid burning.
  4. Add Flour and Liquids: Sprinkle in the flour and stir well to combine. Then whisk in the honey, wholegrain mustard, chicken stock, and sweet chili sauce to form a rich sauce.
  5. Coat Chicken: Return the browned chicken to the pan, turning to coat thoroughly in the sauce ensuring maximum flavor absorption.
  6. Bake: Transfer the pan to the preheated oven and bake for 30-35 minutes until the chicken is fully cooked through, tender, and the sauce is bubbling.
  7. Prepare Sides: While chicken bakes, steam the green beans and cook the rice or quinoa as preferred.
  8. Serve: Plate the honey mustard chilli chicken alongside the steamed rice and green beans. Optionally garnish with fresh herbs for an extra burst of flavor.
