Ingredients
Scale
For the Chicken
- 4 pieces Chicken Thighs (skin-on for crispy texture)
- 3 cloves Garlic (minced)
For the Sauce
- 2 tablespoons Plain Flour (can use cornstarch as gluten-free substitute)
- 3 tablespoons Wholegrain Mustard (Dijon mustard can be used)
- 4 tablespoons Honey (maple syrup for vegan option)
- 200 ml Chicken Stock (low-sodium preferred)
- 100 ml Organic Sweet Chilli Sauce (adjust based on heat preference)
For Serving
- 200 grams Green Beans (broccoli or asparagus are good substitutes)
- 2 cups Steamed Rice (quinoa is a healthy alternative)
Instructions
- Preheat Oven: Preheat your oven to 200°C (180°C fan-forced) to prepare for baking the chicken.
- Brown Chicken: In an ovenproof pan, heat oil over medium-high heat and brown the chicken thighs for about 4 minutes on each side until golden and crispy.
- Sauté Garlic: Add minced garlic to the pan and sauté for about 30 seconds until fragrant, stirring constantly to avoid burning.
- Add Flour and Liquids: Sprinkle in the flour and stir well to combine. Then whisk in the honey, wholegrain mustard, chicken stock, and sweet chili sauce to form a rich sauce.
- Coat Chicken: Return the browned chicken to the pan, turning to coat thoroughly in the sauce ensuring maximum flavor absorption.
- Bake: Transfer the pan to the preheated oven and bake for 30-35 minutes until the chicken is fully cooked through, tender, and the sauce is bubbling.
- Prepare Sides: While chicken bakes, steam the green beans and cook the rice or quinoa as preferred.
- Serve: Plate the honey mustard chilli chicken alongside the steamed rice and green beans. Optionally garnish with fresh herbs for an extra burst of flavor.
Notes
- Garnish with fresh herbs like parsley or cilantro for added flavor and visual appeal.
- You can substitute broccoli or asparagus for green beans if preferred.
- For a gluten-free version, use cornstarch instead of plain flour in the sauce.
- Maple syrup can replace honey to make this dish vegan-friendly, along with using a plant-based chicken alternative.
- Adjust the amount of sweet chili sauce based on your preferred spice level.
