Instructions
- Preparation: Preheat your oven to 400°F (200°C). Peel and cut the potatoes into halves or quarters. Boil them in salted water until tender, about 15-20 minutes. Drain and let cool slightly.
- Shape Potato Nests: Once the potatoes are cool enough to handle, scoop out a portion creating a hollow nest shape, being careful to leave enough potato to hold the filling.
- Cook Ground Beef Mixture: In a skillet, heat butter or oil over medium heat. Sauté the chopped onion until translucent, about 3-4 minutes. Add the ground beef, season with garlic powder, paprika, salt, and pepper. Cook until browned and cooked through.
- Assemble Nests: Place the potato nests onto a greased baking sheet. Spoon the savory ground beef mixture into each nest, then top with shredded cheese.
- Bake: Bake the stuffed potato nests in the preheated oven for 25-30 minutes or until the cheese is melted and the edges of the potato nests are crispy and golden brown.
