  • Total Time: 60 minutes
  • Yield: 4 servings 1x

Description

Delicious stuffed potato nests filled with savory ground beef and topped with melted cheese, baked to perfection with crispy edges. This comforting dish combines tender potatoes with flavorful seasoned beef, making it an ideal meal for family dinners or gatherings.

Ingredients

Scale

Potato Nests

  • 2 large potatoes (Starchy varieties like russet work best)
  • Butter or oil for greasing (for the baking sheet)

Ground Beef Topping

  • 1 lb ground beef (Can be substituted with ground turkey, chicken, or plant-based alternatives)
  • 1 onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Cheese and Garnish

  • 1 cup shredded cheese (Cheddar, mozzarella, or pepper jack)
  • Chopped parsley for garnish (optional)

Instructions

  1. Preparation: Preheat your oven to 400°F (200°C). Peel and cut the potatoes into halves or quarters. Boil them in salted water until tender, about 15-20 minutes. Drain and let cool slightly.
  2. Create Potato Nests: Once the potatoes are cool enough to handle, scoop out a portion of the potato flesh to make a nest shape, leaving a hollow center for the filling.
  3. Cook Onion: In a skillet, heat some butter or oil over medium heat. Sauté the chopped onion until translucent, about 3-4 minutes, stirring occasionally.
  4. Cook Ground Beef: Add the ground beef to the skillet with the sautéed onion. Sprinkle in garlic powder, paprika, salt, and pepper. Cook until the beef is browned and cooked through, breaking up any clumps.
  5. Assemble Nests: Place the potato nests onto a greased baking sheet. Spoon the savory beef mixture into each nest, filling them generously.
  6. Add Cheese Topping: Top each filled nest with shredded cheese evenly.
  7. Bake: Bake in the preheated oven for 25-30 minutes or until the cheese melts and the edges of the potato nests become crispy and golden.
  8. Serve: Remove from oven and finish with a sprinkle of chopped parsley for garnish. Serve warm and enjoy.
