Ingredients
Scale
Potato Nests
- 2 large potatoes (Starchy varieties like russet work best)
- Butter or oil for greasing (for the baking sheet)
- Chopped parsley for garnish (optional)
Ground Beef Topping
- 1 lb ground beef (can be substituted with ground turkey, chicken, or plant-based alternatives)
- 1 cup shredded cheese (Cheddar or your choice, mozzarella or pepper jack can add exciting flavors)
- 1 onion, chopped (sauté until translucent)
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste (season according to preference)
Instructions
- Preparation: Preheat your oven to 400°F (200°C). Peel and cut the potatoes into halves or quarters. Boil them in salted water until tender, about 15-20 minutes. Drain and let cool slightly.
- Create Potato Nests: Once the potatoes are cool enough to handle, scoop out a portion of the inside to create a nest shape, reserving the scooped potato for another use if desired.
- Cook Ground Beef: In a skillet, heat some butter or oil over medium heat. Sauté the chopped onion until translucent, about 3-4 minutes. Add the ground beef to the skillet. Sprinkle in garlic powder, paprika, salt, and pepper. Cook until the beef is browned and cooked through, stirring occasionally.
- Assemble Nests: Place the potato nests onto a greased baking sheet. Spoon the savory ground beef mixture into each nest, filling them generously.
- Add Cheese and Bake: Top each filled nest with shredded cheese. Bake in the preheated oven for 25-30 minutes or until the cheese has melted and the edges of the potato nests are crispy and golden brown.
- Serve: Remove from the oven and finish with a sprinkle of chopped parsley for garnish, if desired. Serve warm and enjoy your hearty stuffed potato nests.
Notes
- You can use ground turkey, chicken, or plant-based meat alternatives instead of ground beef for a different flavor or dietary preference.
- Choose cheeses such as cheddar for classic flavor, or mozzarella and pepper jack for a varying taste experience.
- Adjust seasonings like paprika, garlic powder, salt, and pepper to suit your taste.
- Leftover scooped potato can be saved and used in mashed potatoes or potato cakes.
- Make sure not to overfill the nests to prevent overflow during baking.
- These nests can be prepared ahead of time and baked just before serving.
