Blondie Batter
- 1 cup butter (room temperature)

Strawberry Lemon Icing
- 2 tablespoons butter (room temperature)
- 1 cup powdered sugar
- 1–2 tablespoons strawberry jam
- 1 tablespoon lemon juice
Instructions
- Preheat the oven: Set your oven to 350°F (175°C) to prepare for baking the blondies.
- Make the batter: In a stand mixer bowl, combine the room temperature butter, sugar, lemon juice, and lemon zest. Use the paddle attachment to cream these ingredients together until light and fluffy, about 1-2 minutes. Then add the egg and mix, scraping down the bowl as needed.
- Incorporate dry ingredients: Add the flour, baking powder, and salt to the wet mixture. Beat on low speed just until fully combined and no streaks of butter remain, being careful not to overmix. Gently fold in the diced strawberries by hand.
- Prepare the baking pan: Line a 9″ x 9″ baking pan with parchment paper or lightly spray it with nonstick cooking spray. Press the blondie batter evenly into the bottom of the pan.
- Bake the blondies: Bake for 20-25 minutes until the edges are just starting to turn golden. Remove from the oven and allow to cool slightly.
- Make the icing: In a clean stand mixer bowl, cream together the room temperature butter and ½ cup powdered sugar until light and fluffy. Gradually add the remaining powdered sugar, strawberry jam, and lemon juice, mixing until smooth and spreadable. Adjust by adding more lemon juice or powdered sugar if needed to achieve desired consistency.
- Frost the blondies: Using an offset spatula, spread the strawberry lemon icing evenly over the warm blondies, covering right to the edges.
