Instructions
- Mix ingredients: In a bowl, whisk together the Greek yogurt, peanut butter, honey or maple syrup, vanilla extract, and sea salt for 30 to 60 seconds until the mixture is glossy and smooth, ensuring all components are well combined.
- Add chocolate chips (optional): Gently fold in mini chocolate chips if using, taking care not to overmix to keep the texture intact.
- Portion mixture: Spoon the mixture into silicone molds or a parchment-lined mini muffin tray using a small cookie scoop to create evenly sized bites.
- Freeze initially: Place the molds uncovered in the freezer for 30 minutes to start firming up the bites.
- Freeze until firm: After 30 minutes, cover the molds and continue freezing for 2 to 3 hours until the bites are completely firm.
- Add chocolate drizzle or dip (optional): If desired, melt dark chocolate with coconut oil and dip or drizzle over the frozen bites, then return them to the freezer for 10 to 15 minutes to set the chocolate coating.
