Ingredients
Scale
Chocolate Pudding
- 2 cups milk
- 1/2 cup sugar
- 1/4 cup cocoa powder
- 3 tbsp cornstarch
- 1/4 tsp salt
- 2 eggs
- 1 tsp vanilla extract
Crust
- 1 1/2 cups crushed graham crackers
- 2 tbsp butter, melted
Topping
- 2 cups marshmallows
Instructions
- Make the chocolate pudding: In a saucepan, whisk together milk, sugar, cocoa powder, cornstarch, and salt until smooth. Bring the mixture to a boil over medium heat, stirring frequently. Meanwhile, in a separate bowl, whisk the eggs. Slowly pour some of the hot milk mixture into the eggs while whisking constantly to temper them. Return the egg mixture to the saucepan and continue cooking until the pudding thickens, then remove from heat and stir in vanilla extract.
- Prepare the crust: Combine the crushed graham crackers with melted butter until well mixed. Press the mixture firmly into the bottom of individual serving cups to form a crust.
- Assemble and chill: Pour the warm chocolate pudding over the graham cracker crust layer in each cup. Top with additional crushed graham crackers and marshmallows. Refrigerate the pudding cups for at least 2 hours to allow them to set and chill thoroughly.
- Toast marshmallows: Once chilled, place the pudding cups under a broiler on low heat and toast the marshmallows until they turn golden brown and slightly crispy. Watch closely to prevent burning. Serve immediately.
Notes
- The pudding will thicken as it cools, so be cautious not to overcook it on the stove.
- If you don’t have a broiler, you can use a kitchen torch to toast the marshmallows.
- For a richer pudding, substitute whole milk or add a splash of cream.
- Prepare the crust and pudding in advance to save time before serving.
