Description

Crispy Chicken Taquitos are a delicious Mexican-inspired dish featuring shredded chicken combined with cheese, cream cheese, and spices, rolled into tortillas and cooked until golden and crispy. Perfectly suitable for frying, baking, or air frying, these taquitos offer a versatile, flavorful snack or meal option enjoyed with a variety of toppings and sides.

Ingredients

Scale

For the Chicken Filling

  • 2 cups cooked shredded chicken
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1/3 cup cream cheese (softened)
  • 1/4 cup salsa
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

For the Taquitos

  • 1012 small corn or flour tortillas
  • Oil for frying (if deep frying) or cooking spray (for baking/air frying)

Optional Toppings

  • Sour cream
  • Guacamole
  • Salsa
  • Shredded lettuce
  • Diced tomatoes
  • Fresh cilantro

Instructions

  1. Prepare the Filling: In a large bowl, combine the shredded chicken, shredded cheese, softened cream cheese, salsa, chili powder, cumin, garlic powder, salt, and pepper. Mix thoroughly until the ingredients are evenly combined and the mixture becomes creamy.
  2. Prepare the Tortillas: Warm the tortillas slightly in a pan or microwave to make them flexible, which prevents cracking and makes rolling easier.
  3. Assemble the Taquitos: Place a spoonful of the chicken mixture along one edge of each tortilla. Roll each tortilla tightly into a cylinder and place seam-side down to keep them secure.
  4. Cook the Taquitos:
Frying Method: Heat oil in a pan over medium-high heat. Fry the taquitos for 2–3 minutes per side until golden and crispy. Remove and drain on paper towels.
Baking Method: Preheat the oven to 200°C (400°F). Arrange taquitos on a baking sheet, lightly spray with oil, and bake for 15–20 minutes until crisp.
Air Fryer Method: Cook taquitos at 190°C (375°F) for 8–10 minutes, turning halfway through, until they turn golden and crispy.
  5. Serve: Serve the taquitos hot with your favorite toppings such as sour cream, guacamole, salsa, shredded lettuce, diced tomatoes, or fresh cilantro for a flavorful meal or snack.

Notes

  • Roll the taquitos tightly to keep the filling secure during cooking.
  • Use corn tortillas for a more traditional texture and authentic flavor.
  • When frying, avoid overcrowding the pan to ensure even cooking and crispiness.
  • Preheat oil properly before frying to achieve optimal crispiness.
  • For a lighter option, choose baking or air frying methods instead of frying.
  • Leftover taquitos can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or air fryer.
