Chicken Filling
- 2 cups cooked shredded chicken
- 1/2 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- 1/3 cup cream cheese (softened)
- 1/4 cup salsa
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Taquitos
- 10–12 small corn or flour tortillas
- Oil for frying (if deep frying) or cooking spray (for baking/air frying)
Optional Toppings
- Sour cream
- Guacamole
- Salsa
- Shredded lettuce
- Diced tomatoes
- Fresh cilantro
Instructions
- Prepare the Filling: In a large bowl, combine shredded chicken, shredded cheese, softened cream cheese, salsa, chili powder, cumin, garlic powder, salt, and pepper. Mix thoroughly until the mixture is creamy and all ingredients are evenly incorporated.
- Prepare the Tortillas: Warm tortillas in a pan or microwave just enough to make them pliable and easy to roll without cracking.
- Assemble the Taquitos: Spoon a generous amount of the chicken filling along one edge of each tortilla. Roll the tortilla tightly into a cylinder ensuring the filling is secure. Place the rolled taquito seam-side down to prevent unrolling during cooking.
- Cook the Taquitos: Frying Method: Heat oil in a pan over medium-high heat. Fry taquitos for 2 to 3 minutes on each side until golden and crispy. Drain excess oil on paper towels. Baking Method: Preheat oven to 200°C (400°F). Arrange taquitos on a baking sheet, lightly spray with oil, and bake for 15 to 20 minutes until crispy and golden. Air Fryer Method: Preheat air fryer to 190°C (375°F). Place taquitos in the basket without overcrowding and cook for 8 to 10 minutes, turning halfway through, until crispy and golden brown.
- Serve: Serve the crispy taquitos hot with your choice of toppings such as sour cream, guacamole, salsa, shredded lettuce, diced tomatoes, and fresh cilantro for a flavorful finishing touch.
Notes
- Roll tortillas tightly to keep the filling secure during cooking.
- Use corn tortillas for a more traditional texture and flavor.
- Do not overcrowd the pan or air fryer when cooking to ensure even crisping.
- Preheat oil or oven properly for the best crispy results.
- Leftover taquitos can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or air fryer to restore crispiness.
