Instructions

  2. Cook Chicken: Heat 2 tablespoons of olive oil over medium-high heat in a large skillet. Add the diced chicken breast, season with 1 tablespoon of Cajun seasoning, salt, and pepper. Cook the chicken until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Sauté Vegetables: In the same skillet, add the diced onion and bell pepper. Sauté until they are softened, about 4-5 minutes. Then add the minced garlic and cook for another minute until fragrant.
  4. Create Sauce: Reduce the heat to medium. Pour in 1 cup of chicken broth to deglaze the pan, scraping up any browned bits from the bottom. Add 1 cup of heavy cream and the remaining tablespoon of Cajun seasoning. Stir well and bring the sauce to a gentle simmer.
  5. Combine and Finish: Return the cooked chicken to the skillet and add the drained rigatoni. Toss everything together so the pasta and chicken are coated with the creamy Cajun sauce. Stir in 1 cup of shredded cheddar cheese until melted and smooth. If the sauce is too thick, gradually add the reserved pasta water until the desired consistency is reached.
