Chicken Mixture

Taco Assembly

  • 8 small flour tortillas
  • ½ head romaine lettuce, chopped
  • ⅓ cup Caesar dressing
  • ½ cup grated parmesan cheese
  • 3 tablespoons bacon bits
  • Optional: crushed croutons

Instructions

  1. Season the chicken mix. In a bowl, add the ground chicken and season with garlic powder, salt, and black pepper. Mix thoroughly to combine and evenly distribute the seasoning.
  2. Smash chicken onto tortillas. Flip the tortillas over and spread a thin, even layer of the seasoned ground chicken onto the back of each tortilla, pressing down firmly to ensure it’s flat and adheres well.
  3. Cook chicken side down. Heat a skillet over medium-high heat with a small amount of olive or avocado oil. Place the tortillas chicken-side down in the pan and cook for about 3 minutes, until the chicken is fully cooked and develops a crispy, golden crust.
  4. Crisp the tortilla side. Flip the tortillas over and cook the tortilla side for an additional 1 to 2 minutes until it turns golden and crisp to provide a sturdy base.
  5. Prepare Caesar salad topping. Mix the chopped romaine lettuce with Caesar dressing thoroughly. This can be done ahead or right before assembly for freshness.
  6. Assemble the tacos. Top each crispy chicken-coated tortilla with the dressed romaine lettuce, sprinkle grated parmesan cheese and bacon bits evenly, and add crushed croutons if desired.
