Chicken Mixture
- 500g (1 pound) ground chicken
- 1 tbsp garlic powder

Taco Assembly
- 8 small flour tortillas
- ½ head romaine lettuce, chopped
- ⅓ cup Caesar dressing
- ½ cup grated parmesan cheese
- 3 tablespoons bacon bits
- Optional: crushed croutons
Instructions
- Season the chicken mix. In a bowl, add the ground chicken and season with garlic powder, salt, and black pepper. Mix thoroughly to combine and evenly distribute the seasoning.
- Smash chicken onto tortillas. Flip the tortillas over and spread a thin, even layer of the seasoned ground chicken onto the back of each tortilla, pressing down firmly to ensure it’s flat and adheres well.
- Cook chicken side down. Heat a skillet over medium-high heat with a small amount of olive or avocado oil. Place the tortillas chicken-side down in the pan and cook for about 3 minutes, until the chicken is fully cooked and develops a crispy, golden crust.
- Crisp the tortilla side. Flip the tortillas over and cook the tortilla side for an additional 1 to 2 minutes until it turns golden and crisp to provide a sturdy base.
- Prepare Caesar salad topping. Mix the chopped romaine lettuce with Caesar dressing thoroughly. This can be done ahead or right before assembly for freshness.
- Assemble the tacos. Top each crispy chicken-coated tortilla with the dressed romaine lettuce, sprinkle grated parmesan cheese and bacon bits evenly, and add crushed croutons if desired.
- Serve immediately. Fold the tacos and enjoy them hot while the chicken remains crispy and the lettuce cool and fresh, providing the perfect texture contrast.
