Description

  • 1/2 cup vegetable oil
  • 1 1/2 cups sugar
  • 2 teaspoons vanilla extract

Dry Ingredients:

  • 2 cups flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt

Additional:

  • 2 cups shredded zucchini
  • 1 cup semi-sweet chocolate chips, divided

Instructions

  1. Preheat Oven: Preheat the oven to 350 degrees Fahrenheit and spray a 9×13 inch baking pan with baking spray.
  2. Mix Wet Ingredients: In a large mixing bowl, whisk together the vegetable oil, sugar, and vanilla extract until smooth.
  3. Combine Dry Ingredients: Sift the flour, cocoa powder, baking soda, and salt, then whisk into the wet mixture until just combined.
  4. Add Zucchini and Chocolate: Stir in the shredded zucchini and 1/2 cup of chocolate chips.
  5. Bake: Press the mixture into the prepared baking dish and top with the remaining chocolate chips. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
