Top Sirloin Steaks:
- 2 1-inch thick top sirloin steaks (about 1–1.5 lbs)
Baby Potatoes:
- 1 lb baby potatoes
Green Beans:
- 1 lb green beans (trimmed)
Seasonings:
- 2 tbsp avocado oil (or your favorite cooking oil)
- 2 tbsp lemon juice
- 2 garlic cloves (minced)
- 1/2 tsp sea salt (plus more to taste)
- Ground black pepper (to taste)
- Chopped parsley (optional, for garnish)
- Ghee or butter (optional, to serve with steak)
Instructions
- Preheat Oven: Preheat oven to 400°F and grease a large baking sheet.
- Prepare Steaks: Take the steaks out to reach room temperature while preparing vegetables.
- Prep Vegetables: Cut potatoes into bite-sized pieces and place them with green beans on the baking sheet.
- Make Seasoning: Whisk together avocado oil, lemon juice, garlic, salt, and pepper; pour over vegetables.
- Roast Vegetables: Roast in the oven for 20 minutes.
- Cook Steaks: Season steaks, broil for 4-5 minutes per side until desired doneness.
- Rest and Serve: Let steaks rest before slicing; garnish with parsley and serve with ghee or butter.

- If you prefer crispy potatoes and green beans, cook them longer with the steak under the broiler.
