Description

Learn how to make warm breakfast rolls from scratch or using store-bought dough, filled with eggs, sausage, cheese, and more. These delicious rolls are perfect for breakfast or brunch gatherings.

Ingredients

Scale

For the dough (if making from scratch):

  • 3 cups all-purpose flour
  • 1 packet (2¼ tsp) instant yeast
  • 1 cup warm milk
  • 2 tbsp sugar
  • 1 tsp salt
  • 2 tbsp melted butter

For the filling:

  • 6 large eggs, scrambled
  • 1 cup cooked sausage, bacon, or ham (chopped)
  • 1½ cups shredded cheddar or Colby-Jack cheese
  • ½ cup chopped green onions (optional)
  • Salt and pepper to taste
  • 1 tbsp butter (for brushing the tops)

Instructions

  1. Prepare the Dough (if homemade): In a bowl, combine warm milk, sugar, and yeast. Let sit for 5 minutes. Add flour, salt, and melted butter. Mix and knead until smooth. Let rise for 1 hour.
  2. Cook the Filling: Scramble the eggs in a skillet. Season with salt and pepper. Stir in cooked sausage or bacon, green onions, and cheese. Set aside to cool.
  3. Roll Out and Fill: Roll dough into a large rectangle. Cut into 8–10 squares. Add a spoonful of filling to each and fold edges over to form rolls. Seal seams underneath.
  4. Bake: Place rolls on a baking sheet lined with parchment. Brush with butter. Bake at 375°F for 18–22 minutes, until golden brown.
  5. Serve or Store: Let cool slightly before serving—or cool completely to store for later.
