Instructions

  1. Preheat and Prepare: Preheat the oven to 350 degrees F (175 degrees C). Lightly spray a 13×9-inch baking dish with nonstick cooking spray to prevent sticking.
  2. Brown the Beef and Onions: In a large skillet over medium heat, brown the ground beef until it is almost cooked through. Add the finely chopped onion and continue cooking until the onions are soft and the beef is no longer pink.
  3. Add Seasoning and Water: Stir in the taco seasoning packet and ½ cup water. Bring the mixture to a boil to blend the flavors.
  4. Incorporate Beans, Tomatoes, and Sour Cream: Reduce heat to low, then stir in the drained black beans, diced tomatoes with green chiles, and ½ cup sour cream. Simmer for 8-10 minutes until the mixture is heated through and slightly thickened.
  5. Layer the Casserole: Add a single layer of Fritos corn chips to the bottom of the prepared baking dish. Sprinkle 1 cup of the shredded cheese evenly over the chips. Spread the beef and bean mixture over the cheese layer, then top with the remaining shredded cheese.
  6. Bake Covered: Cover the baking dish with aluminum foil and bake in the preheated oven for 15 minutes.
  7. Bake Uncovered: Remove the foil and continue baking for an additional 5 minutes, or until the cheese is melted and the casserole is bubbly around the edges.
  8. Add Toppings and Serve: Remove the casserole from the oven. Top with additional Fritos corn chips and your favorite toppings such as sliced green onions, sour cream, guacamole, salsa, and jalapenos. Serve warm and enjoy!
