For the Beef Mixture:
- 1 pound ground beef
- 1 medium onion, chopped
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) diced tomatoes with green chilies
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
For the Cornmeal Layer:
- 1 cup cornmeal
- 1 cup milk
- 1 large egg
Additional Ingredients:
- 1 cup shredded cheddar cheese
- 1/2 cup sliced black olives (optional)
- 1/4 cup chopped fresh cilantro (for garnish)
Instructions
- Preheat the oven: Preheat your oven to 350°F.
- Cook the beef: In a large skillet over medium heat, cook the ground beef and chopped onion until browned. Drain any excess fat.
- Prepare the beef mixture: Stir in black beans, diced tomatoes, chili powder, cumin, garlic powder, salt, and pepper. Simmer for 5 minutes.
- Mix the cornmeal layer: In a bowl, combine cornmeal, milk, and egg until smooth.
- Assemble the pie: Grease a baking dish and layer cornmeal mixture, beef mixture, remaining cornmeal mixture, cheese, and olives.
- Bake: Bake for 30-35 minutes until golden and set.
- Rest and garnish: Cool for 10 minutes, then garnish with cilantro before serving.
