  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes with green chilies
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the Cornmeal Layer:

  • 1 cup cornmeal
  • 1 cup milk
  • 1 large egg

Additional Ingredients:

  • 1 cup shredded cheddar cheese
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup chopped fresh cilantro (for garnish)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F.
  2. Cook the beef: In a large skillet over medium heat, cook the ground beef and chopped onion until browned. Drain any excess fat.
  3. Prepare the beef mixture: Stir in black beans, diced tomatoes, chili powder, cumin, garlic powder, salt, and pepper. Simmer for 5 minutes.
  4. Mix the cornmeal layer: In a bowl, combine cornmeal, milk, and egg until smooth.
  5. Assemble the pie: Grease a baking dish and layer cornmeal mixture, beef mixture, remaining cornmeal mixture, cheese, and olives.
  6. Bake: Bake for 30-35 minutes until golden and set.
  7. Rest and garnish: Cool for 10 minutes, then garnish with cilantro before serving.
