Scale
Teriyaki Sauce
- 1/2 cup low-sodium soy sauce
- 1/4 cup water
- 2 tablespoons red wine vinegar
- 2 tablespoons brown sugar
- 2 tablespoons granulated sugar
- 2 teaspoons minced garlic
- 1 teaspoon ground ginger
- 1 tablespoon cornstarch
- 2 tablespoons warm water
Protein and Vegetables
- 1 pound ground turkey
- 1 cup broccoli, finely chopped
- 2 large carrots, grated
- 1/2 cup diced onion
- 1 tablespoon vegetable oil
- Garlic (additional for sautéing, about 1 teaspoon minced)
- Fresh ginger (optional, about 1 teaspoon minced for sautéing)
Additional
- 4 cups cooked white or brown rice
- Green onions for garnish
Instructions
- Prepare Teriyaki Sauce: In a mixing bowl, whisk together the soy sauce, 1/4 cup water, red wine vinegar, brown sugar, granulated sugar, minced garlic, ground ginger, cornstarch, and 2 tablespoons warm water until smooth and set aside.
- Sauté Vegetables: Heat the vegetable oil in a non-stick skillet over medium heat. Add diced onions and minced garlic; sauté until fragrant and translucent, about 2-3 minutes. Then add the finely chopped broccoli and grated carrots, cooking until tender, approximately 4-5 minutes.
- Cook Turkey: Add the ground turkey to the skillet with the sautéed vegetables. Break the meat apart and cook until browned and fully cooked through, about 6-7 minutes.
- Add Teriyaki Sauce: Pour the prepared teriyaki sauce into the skillet with the turkey and vegetables. Stir well to combine and simmer the mixture for about 5 minutes or until the sauce has thickened and coats the ingredients nicely.
- Assemble Bowls: To serve, spoon a generous portion of cooked white or brown rice into bowls. Top with the teriyaki turkey and vegetable mixture. Garnish with chopped green onions for a fresh finish.
Notes
- Use low-sodium soy sauce to control salt levels.
- For added flavor, consider adding a splash of sesame oil when sautéing vegetables.
- Brown rice can be substituted for white rice for a higher fiber option.
- Prepare the teriyaki sauce in advance to save time during cooking.
- Ground chicken or pork can be used instead of turkey.
- Adjust sweetness by varying the amount of brown and granulated sugar.
