Description

These Strawberry Cheesecake Protein Balls are a delicious and nutritious no-bake snack that combines the creamy sweetness of cheesecake with the fruity tang of freeze-dried strawberries. Perfect for a quick energy boost or a healthy treat, these protein balls are easy to make and packed with protein and flavor.

Ingredients

Scale

Dry Ingredients

  • 1 cup vanilla protein powder
  • ¾ cup oat flour (or finely ground oats)
  • ¼ cup freeze-dried strawberries, crushed
  • ½ tsp vanilla extract
  • Pinch of salt

Wet Ingredients

  • 4 oz cream cheese, softened
  • 3 tbsp Greek yogurt (plain or vanilla)
  • 2 tbsp honey or maple syrup

Optional Coating

  • Pink/red sprinkles or extra crushed strawberries

Instructions

  1. Mix dry ingredients: In a medium bowl, combine the vanilla protein powder, oat flour, crushed freeze-dried strawberries, and a pinch of salt. Stir until the mixture is evenly blended.
  2. Add wet ingredients: Add the softened cream cheese, Greek yogurt, honey (or maple syrup), and vanilla extract to the dry mixture.
  3. Mix well: Stir all ingredients together until a thick, dough-like consistency forms. If the mixture feels too dry, add 1 teaspoon of milk at a time until it reaches the desired texture.
  4. Roll: Using a spoon or small scoop, portion out the mixture and roll it between your hands into bite-sized balls.
  5. Coat (optional): Roll the balls in pink or red sprinkles or extra crushed freeze-dried strawberries for a decorative and flavorful coating.
  6. Chill: Place the protein balls in the refrigerator for at least 30 minutes to firm up and set.
  7. Enjoy and store: Enjoy immediately or store the protein balls in an airtight container in the fridge for up to 5 days for a convenient and healthy snack.

Notes

  • If the mixture is too sticky to roll, chill it for 10-15 minutes to make handling easier.
  • Oat flour can be made by finely grinding rolled oats in a food processor if you don’t have it on hand.
  • You can substitute the honey with maple syrup to make this recipe vegan-friendly.
  • These protein balls can be frozen for up to 1 month. Thaw in the fridge before eating.
  • For added texture, consider folding in chopped nuts or seeds into the mixture before rolling.
