Cake:

Toffee Sauce:
- 8 tbsp (1 stick) unsalted butter, melted
- 1 cup heavy cream
- 1 cup + 2 tbsp brown sugar
- 2 tsp vanilla extract
Instructions
- Prepare the Dates: Pour boiling water over the chopped dates in a heatproof bowl, stir in baking soda, cover, and let sit for 30 minutes.
- Preheat and Prep: Preheat oven to 350°F, butter a 9×13 baking pan.
- Blend Dates: Blend the softened date mixture until smooth.
- Mix Cake Batter: In a large bowl, combine melted butter, sugars, eggs, and salt. Stir in flour, then fold in the date puree.
- Bake: Pour batter into the pan and bake for 25-30 minutes or until a toothpick comes out clean.
- Make Toffee Sauce: In a saucepan, combine butter, cream, sugar, and vanilla. Simmer and whisk for 10 minutes until thickened.
