Instructions

  3. Sauté Vegetables: In the same skillet, add the diced onion and bell pepper. Cook for 3-4 minutes, stirring occasionally, until the vegetables have softened and released their flavors.
  4. Add Rice and Spices: Stir in the cooked long-grain white rice along with paprika, cumin, chili powder, salt, and pepper. Mix thoroughly and cook until the rice is heated through, about 2-3 minutes.
  5. Melt the Queso: Gradually add the queso cheese to the skillet, stirring constantly until the cheese melts and creates a creamy sauce coating the rice and vegetables.
  6. Combine and Serve: Add the sliced rested sirloin back into the skillet and toss gently to combine with the queso rice. Serve hot topped with fresh cilantro, a dollop of sour cream, and avocado slices if desired.
