  • Author: Zoe

  • Diet: Gluten Free, Vegetarian

Description

Crispy Smashed Carrots are a simple and flavorful side dish featuring tender boiled carrots flattened and roasted to perfection with garlic, smoked paprika, and Parmesan cheese. This method enhances caramelization, creating crispy edges and a rich, nutty flavor that elevates ordinary carrots into an exciting, nutritious dish.

Ingredients

Scale

Carrots

  • 1 lb carrots, peeled and cut into thick rounds

Seasonings and Toppings

  • 1 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and ease cleanup.
  2. Boil Carrots: Place the carrot rounds in salted water and boil them for 10–12 minutes until they are fork-tender. Drain the carrots and let them cool slightly to handle safely.
  3. Smash Carrots: Arrange the carrots on the prepared baking sheet. Using the bottom of a glass or measuring cup, gently press down on each carrot piece to flatten it. This increases the surface area for roasting and caramelization.
  4. Season and Add Cheese: Drizzle the flattened carrots with olive oil. Sprinkle evenly with garlic powder, smoked paprika, salt, and black pepper. Top each carrot with grated Parmesan cheese for a savory crust.
  5. Roast: Place the baking sheet in the preheated oven and roast the carrots for 20–25 minutes, flipping them halfway through cooking. Roast until they are crispy and golden brown on the edges.
  6. Garnish and Serve: Remove from the oven, garnish with freshly chopped parsley, and serve hot to enjoy the best texture and flavor.

Notes

  • Do not overcook the carrots during boiling to avoid mushy textures that are hard to smash.
  • Use a sturdy glass or measuring cup to gently flatten the carrot rounds without breaking them apart.
  • For a vegan alternative, substitute Parmesan cheese with nutritional yeast or a plant-based cheese.
  • Season generously but adjust salt and spices to your taste preference.
  • Serve immediately after roasting to maintain crisp edges and soft centers.
