Steak:

  • 1 ½ lbs sirloin or ribeye steak, cubed
  • smoked paprika
  • black pepper

Potato Layers:

  • 4 large Russet or Yukon Gold potatoes, thinly sliced
  • 2 cups sharp cheddar cheese, freshly grated
  • 1 cup heavy cream
  • 1 cup beef broth
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp butter

Instructions

  1. Sear the Steak: In a skillet, melt butter over medium-high heat. Add cubed steak seasoned with salt, pepper, and smoked paprika. Sear until browned on all sides. Remove from heat.
  2. Layer Ingredients: In the slow cooker, alternate layers of potatoes, onion, garlic, and seared steak. Finish with a final layer of potatoes, onion, and garlic.
  3. Add Liquids: Pour beef broth and heavy cream over the layers. Season with additional salt and pepper.
  4. Top with Cheese: Sprinkle freshly grated cheddar cheese over the top.
  5. Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender.
