Description

This Slow Cooker Parmesan Garlic Chicken Sandwich is a flavorful and easy-to-make meal that combines tender, shredded chicken cooked in a savory garlic parmesan broth, topped with melted mozzarella cheese and toasted garlic butter sandwich rolls. Perfect for a comforting lunch or dinner, this recipe requires minimal prep and uses a slow cooker for convenience.

Ingredients

Scale

Chicken and Seasonings

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Sandwich & Toppings

  • 6 sandwich rolls
  • 2 tablespoons butter, melted
  • 1/2 teaspoon garlic powder
  • 1 cup shredded mozzarella cheese

Instructions

  1. Prepare Chicken in Slow Cooker: Place the boneless, skinless chicken breasts in the slow cooker and pour the chicken broth over them. This will keep the chicken moist and flavorful.
  2. Add Seasoning Mixture: In a small bowl, combine grated Parmesan cheese, minced garlic, dried basil, dried parsley, salt, and black pepper. Sprinkle this mixture evenly over the chicken in the slow cooker to infuse it with robust flavors.
  3. Cook Chicken: Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and can be easily shredded with a fork.
  4. Preheat Oven and Shred Chicken: Preheat your oven to 375°F (190°C). Remove the cooked chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and mix it thoroughly with the remaining cooking juices to keep it moist.
  5. Prepare and Toast Rolls: Split the sandwich rolls in half. Mix melted butter with garlic powder and brush the mixture onto the inside of each roll. Place the rolls in the oven and toast for about 5 minutes or until golden brown and fragrant.
  6. Assemble Sandwiches: Spoon a generous amount of the shredded chicken onto the bottom half of each toasted roll. Sprinkle shredded mozzarella cheese on top of the chicken, then place the top half of the roll over the cheese to complete the sandwich.
  7. Serve: Serve the sandwiches hot and enjoy the melty, garlicky goodness of the slow-cooked chicken with parmesan and mozzarella.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the seasoning mixture.
  • Use sandwich rolls with a sturdy crust to prevent sogginess from the juicy shredded chicken.
  • Leftover shredded chicken can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
  • You can substitute mozzarella cheese with provolone or cheddar for a different flavor profile.
