Ingredients
Zucchini Mixture:
- 8 cups peeled and seeded fresh zucchini, cubed (about 5 lb whole zucchini)
- 2/3 cup lemon juice
- 1 cup granulated sugar
- 1/4 tsp ground nutmeg
- 1/2 tsp cinnamon
Crust and Topping:
- 4 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 1/2 cups salted butter, cut into cubes
Instructions
- Prepare and Cook the Zucchini Filling
Preheat your oven to 350°F (175°C). Peel, de-seed, and cube the fresh zucchini. Cook zucchini and lemon juice in a pot until tender.
- Add Spices and Sweeten the Filling
Add sugar, nutmeg, and cinnamon to the zucchini. Simmer and adjust spices as needed.
- Prepare the Crust and Crumble Topping
Combine flour and sugar. Cut in butter until crumbly.
- Pre-bake the Crust
Spread half of the crust/crumble dough in a baking sheet. Bake for 10 minutes.
- Assemble and Bake the Zucchini Bars
Pour zucchini filling over pre-baked crust. Sprinkle remaining crumble mixture. Bake until golden brown.
- Cool, Slice, and Serve
Cool bars before slicing. Store in the fridge and dust with powdered sugar if desired.
