Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. Prepare Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. Cream Butter and Sugar: In a large bowl, cream the softened butter and sugar until light and fluffy. Beat in eggs, vanilla extract, and lemon zest.
  4. Combine Wet and Dry Ingredients: Alternate adding the dry ingredients and buttermilk to the butter mixture, mixing until just combined.
