  • 1 tsp Cornstarch
  • 1 tbsp Water

  • 1.5 cups Cooked Rice (white, brown, or jasmine)
  • 1 cup Pineapple Chunks (fresh or drained canned)
  • 1/2 Red Bell Pepper, diced
  • 1/4 cup Green Onions, chopped

Instructions

  1. Sauté the Chicken: Heat olive or sesame oil in a large pan over medium heat. Add the chicken breast pieces and cook for 6-8 minutes, stirring occasionally, until browned and cooked through. Once done, remove the chicken from the pan and set aside on a plate.
  2. Prepare the Sauce: In the same pan, add minced garlic and sauté for about 30 seconds until fragrant. Pour in soy sauce, pineapple juice, honey, and vinegar. Stir well, then bring the mixture to a gentle simmer.
  3. Thicken and Combine: Mix the cornstarch with water thoroughly to create a slurry. Stir this into the simmering sauce to thicken it, cooking for 2-3 minutes until the sauce becomes glossy. Return the cooked chicken to the pan, then add pineapple chunks and diced red bell pepper. Stir to coat everything evenly in the sauce.
  4. Add the Rice: Gently fold the cooked rice into the pan, stirring carefully to warm through and fully combine all ingredients, about 2 minutes.
  5. Garnish and Serve: Remove the pan from heat. Garnish with chopped green onions and a sprinkle of sesame seeds. Serve hot, and optionally add crushed red pepper for a spicy kick.
