Instructions
- Season the Chicken: Pat the chicken breasts dry and evenly coat both sides with Cajun seasoning to infuse bold, spicy flavors.
- Cook the Chicken: Heat olive oil in a large pot or skillet over medium heat. Once hot, add the seasoned chicken and cook for 5-6 minutes per side until golden brown and fully cooked. Remove the chicken from the pot and set aside.
- Sauté Vegetables: In the same pot, add a bit more olive oil if needed. Add chopped bell peppers and sauté for 2-3 minutes until they begin to soften. Add minced garlic and cook for 1 more minute until fragrant.
- Add the Orzo: Stir the orzo pasta into the vegetables, ensuring it is well coated with the oil and flavors in the pot.
- Cook the Orzo: Pour in the chicken broth and bring the mixture to a boil. Reduce to a simmer, cover the pot, and cook for 10-12 minutes, stirring occasionally, until the orzo is tender and most of the broth has been absorbed.
- Create the Sauce: Stir in the heavy cream and freshly grated Parmesan cheese until the cheese melts and the sauce turns creamy. If the sauce is thicker than desired, add a splash more chicken broth. Taste and add additional Cajun seasoning if needed.
- Finish the Dish: Slice the cooked chicken and nestle the pieces back into the pot. Add fresh spinach and stir until wilted. Serve hot, garnished with extra Parmesan cheese and parsley if you like.
