Instructions

  1. Season and Sear Chicken: Season the chicken thighs or breasts with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat a large skillet over medium heat and sear the chicken for about 5 minutes on each side until nicely browned.
  2. Prepare BBQ Honey Sauce: In a small bowl, whisk together the BBQ sauce and honey until combined well. Pour this mixture over the seared chicken in the skillet, coating the pieces evenly.
  3. Add Rice and Broth: Add the long-grain rice and chicken broth into the skillet. Stir gently to combine the rice with the sauce and broth, making sure the rice is submerged.
  4. Simmer: Bring the mixture to a simmer, then cover the skillet with a tight-fitting lid. Reduce heat to low and cook for about 20 minutes, or until the rice is tender and the chicken is cooked through.
  5. Add Vegetables: During the last 5 minutes of cooking, add the mixed vegetables on top of the rice and chicken. Cover again to steam the veggies thoroughly.
  6. Rest and Serve: Once cooking is complete, remove the skillet from heat and let it sit covered for 5 minutes to allow flavors to meld. Fluff the rice gently with a fork before serving.
