Instructions
- Season and Sear Chicken: Season the chicken thighs or breasts with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat a large skillet over medium heat and sear the chicken for about 5 minutes on each side until nicely browned.
- Prepare BBQ Honey Sauce: In a small bowl, whisk together the BBQ sauce and honey until combined well. Pour this mixture over the seared chicken in the skillet, coating the pieces evenly.
- Add Rice and Broth: Add the long-grain rice and chicken broth into the skillet. Stir gently to combine the rice with the sauce and broth, making sure the rice is submerged.
- Simmer: Bring the mixture to a simmer, then cover the skillet with a tight-fitting lid. Reduce heat to low and cook for about 20 minutes, or until the rice is tender and the chicken is cooked through.
- Add Vegetables: During the last 5 minutes of cooking, add the mixed vegetables on top of the rice and chicken. Cover again to steam the veggies thoroughly.
