No Bake Chocolate Oatmeal Bars Recipe

  • Author: Zoe
  • Total Time: 2 hours 20 minutes
  • Yield: 16 bars 1x

Description

Delicious no-bake chocolate oatmeal bars featuring a rich butter and brown sugar oat base layered with a smooth peanut butter and chocolate filling. These bars are easy to make without an oven, perfect for a quick and satisfying treat.

Ingredients

Scale

Base and Layers

  • 1 cup butter
  • 1/2 cup brown sugar (packed)
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats

Chocolate Peanut Butter Filling

  • 1 cup semisweet or dark chocolate chips
  • 1/2 cup peanut butter

Instructions

  1. Prepare Baking Dish: Line an 8-inch or 9-inch square baking dish with parchment paper, leaving overhangs on the edges to easily lift the bars out after chilling. You can use a 9×13-inch dish if you prefer thinner bars.
  2. Melt Butter and Sugar: In a large saucepan over medium heat, melt the butter and brown sugar together until the butter is fully melted and the sugar has dissolved. Stir in the vanilla extract.
  3. Add and Cook Oats: Mix in the rolled oats and cook over low heat for 3 to 4 minutes, stirring frequently until the ingredients are well blended but the oats are not soggy.
  4. Create First Oat Layer: Pour half of the oat mixture into the prepared baking dish. Spread it out evenly and press down firmly to create a dense crust.
  5. Make Chocolate-Peanut Butter Filling: In a small microwave-safe bowl, melt the peanut butter and chocolate chips together. Stir until the mixture is smooth and well combined.
  6. Layer Filling: Pour the melted chocolate-peanut butter mixture over the oat crust, spreading evenly. Reserve about 1/4 cup of the chocolate mixture for drizzling later.
  7. Top with Second Oat Layer and Drizzle: Pour the remaining oat mixture over the chocolate layer, pressing gently to adhere. Drizzle the reserved chocolate mixture on top.
  8. Chill Bars: Refrigerate the bars for 2 to 3 hours or overnight until firm. Before cutting into bars, bring them to room temperature slightly for easier slicing.
  9. Note on Texture: The final texture depends on how long you cook the sugar mixture. Boiling too briefly results in soft bars while boiling too long can make them dry and crumbly.

Notes

  • Use parchment paper with overhangs to easily lift bars from the dish.
  • Adjust cooking time of sugar mixture carefully—don’t under or overcook to achieve the best texture.
  • Refrigerate the bars for at least 2 hours to ensure they set properly.
  • You can use dark or semisweet chocolate chips according to your preference.
  • For thinner bars, use a larger baking dish like 9×13 inches.
