Description

Delicious and easy No Bake Chocolate Oatmeal Bars featuring a buttery oat crust layered with a smooth peanut butter and chocolate filling. Perfect for a quick, no-cook dessert or snack that sets in the fridge without the need for baking.

Base Layer

  • 1 cup butter
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats

Filling

  • 1 cup semisweet or dark chocolate chips
  • 1/2 cup peanut butter

Instructions

  1. Prepare the baking dish. Line an 8-inch or 9-inch square baking dish with parchment paper, leaving overhangs on the edges to easily lift the bars out later. Optionally use a 9×13-inch pan for thinner bars.
  2. Melt butter and sugar. In a large saucepan over medium heat, melt the butter and dissolve the brown sugar completely, stirring gently. Remove from heat once melted and sugar is dissolved, then stir in the vanilla extract.
  3. Mix oats. Add the rolled oats to the butter and sugar mixture and cook over low heat for 3 to 4 minutes, stirring frequently until the oats are fully coated and blended well.
  4. Form base layer. Pour half of the oat mixture into the prepared pan, spreading evenly and pressing down firmly to form a compact base layer. Reserve the other half for the top layer.
  5. Make chocolate peanut butter filling. In a microwave-safe bowl, melt together the peanut butter and chocolate chips. Stir until the mixture is smooth and well combined.
  6. Add chocolate layer. Pour the chocolate mixture evenly over the oat base in the pan, reserving about 1/4 cup to drizzle on top later.
  7. Add top oat layer and finish. Spread the remaining oat mixture evenly over the chocolate layer, pressing down gently. Drizzle the reserved chocolate mixture over the top for decoration.
  8. Chill to set. Refrigerate the bars for 2 to 3 hours or overnight until firm. Allow to come to room temperature before cutting into bars to serve.

Notes

  • The final texture depends on how long you cook the sugar mixture: cooking too briefly results in soft bars; cooking too long causes dry, crumbly texture.
  • Use parchment paper with overlapping edges to easily lift the bars from the pan.
  • For thinner bars, use a larger baking dish such as 9×13-inch.
  • These bars must be chilled for proper setting – avoid skipping refrigeration.
