Meatloaf:
- 1 pound ground beef
- 1/2 pound ground pork
- 1 cup breadcrumbs
- 1/2 cup milk
- 1/2 cup grated Parmesan cheese
- 1/2 cup finely chopped onions
- 1 cup finely chopped mushrooms
- 4 slices bacon, cooked and crumbled
- 1 cup shredded Swiss cheese
- 2 large eggs
- 1 tablespoon Worcestershire sauce
- 1 tablespoon ketchup
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
For Topping:
- 1/2 cup ketchup
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Cook Bacon: In a skillet, cook the bacon until crispy, then crumble it.
- Sauté Onions and Mushrooms: In the same skillet, sauté the chopped onions and mushrooms until softened. Set aside to cool.
- Combine Ingredients: In a large bowl, combine the ground beef, ground pork, breadcrumbs, milk, Parmesan cheese, cooked bacon, Swiss cheese, sautéed onions, and mushrooms.
- Add Seasonings: Add the eggs, Worcestershire sauce, 1 tablespoon of ketchup, garlic powder, thyme, salt, and pepper. Mix gently until combined.
- Shape and Bake: Shape the mixture into a loaf and place in a greased baking dish. Spread 1/2 cup ketchup over the top. Bake for 60-70 minutes until cooked through.
- Rest and Serve: Let the meatloaf rest for 10 minutes before slicing. Serve warm and enjoy!
