Description

Meatloaf:

  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup finely chopped onions
  • 1 cup finely chopped mushrooms
  • 4 slices bacon, cooked and crumbled
  • 1 cup shredded Swiss cheese
  • 2 large eggs
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon ketchup
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For Topping:

  • 1/2 cup ketchup

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Cook Bacon: In a skillet, cook the bacon until crispy, then crumble it.
  3. Sauté Onions and Mushrooms: In the same skillet, sauté the chopped onions and mushrooms until softened. Set aside to cool.
  4. Combine Ingredients: In a large bowl, combine the ground beef, ground pork, breadcrumbs, milk, Parmesan cheese, cooked bacon, Swiss cheese, sautéed onions, and mushrooms.
  5. Add Seasonings: Add the eggs, Worcestershire sauce, 1 tablespoon of ketchup, garlic powder, thyme, salt, and pepper. Mix gently until combined.
  6. Shape and Bake: Shape the mixture into a loaf and place in a greased baking dish. Spread 1/2 cup ketchup over the top. Bake for 60-70 minutes until cooked through.
  7. Rest and Serve: Let the meatloaf rest for 10 minutes before slicing. Serve warm and enjoy!
