Dry Ingredients
- 1/2 cup (50g) rolled oats
- 1/4 cup (30g) vanilla protein powder
- 1/4 cup (40g) mini dark chocolate chips
Wet Ingredients
- 1 cup (240g) almond butter
- 2 tbsp (42g) honey
- 1/4 tsp peppermint extract
- 1–2 tbsp (15-30ml) unsweetened almond milk (if needed)
Instructions
- Combine Ingredients: In a large mixing bowl, combine rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract. Mix thoroughly to ensure all ingredients are well incorporated.
- Adjust Consistency: If the mixture is too dry or crumbly, add unsweetened almond milk one tablespoon at a time until the mixture holds together easily when shaped.
- Add Chocolate Chips: Gently fold the mini dark chocolate chips into the mixture to evenly distribute without breaking them.
- Form Balls: Scoop about 1 tablespoon of the mixture and roll it between your palms to form a smooth, compact ball. Repeat this process for the entire mixture.
- Chill: Place the protein balls on a baking sheet lined with parchment paper and refrigerate for at least 20 minutes to firm up and set.
- Store: Transfer the protein balls to an airtight container and keep refrigerated for up to one week. Enjoy them as a healthy snack anytime.
Notes
- For a vegan version, substitute honey with maple syrup or agave nectar.
- If you prefer a stronger mint flavor, increase peppermint extract slightly, but do so sparingly to avoid overpowering the taste.
- These protein balls can also be frozen for up to one month; thaw before eating.
- Use your choice of nut butter such as peanut or cashew if almond butter is unavailable.
- Ensure protein powder is compatible with your dietary restrictions or preferences.
