Description

This Blackstone Cowboy Stir Fry is a hearty and flavorful dish featuring smoked sausage, tender Yukon gold potatoes, and a medley of fresh vegetables. Ready in just 30 minutes, it’s perfect for a quick weeknight meal that packs bold smoky and savory flavors.

Ingredients

Scale

Meats

  • 1 lb smoked sausage, sliced into 1/2 inch rounds

Vegetables

  • 4 medium Yukon gold potatoes, thinly sliced
  • 1 medium zucchini, sliced into rounds
  • 1 red bell pepper, chopped into bite-sized pieces
  • 1 small onion, chopped

Seasonings & Oils

  • 2 tbsp olive oil or cooking oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp black pepper
  • 1 tsp salt (or to taste)
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1/2 tsp dried oregano or Italian seasoning

Instructions

  1. Preheat Griddle: Preheat your Blackstone griddle to medium-high heat and add 1 tablespoon of olive oil or cooking oil to the surface to prevent sticking.
  2. Cook Potatoes: Add the thinly sliced Yukon gold potatoes and cook for 8-10 minutes, stirring occasionally until they turn golden brown and are tender inside. This creates a crispy yet soft texture.
  3. Set Potatoes Aside: Remove the cooked potatoes from the griddle and set them aside on a plate to keep warm while you cook the other ingredients.
  4. Sauté Vegetables: Add the remaining tablespoon of oil to the griddle and toss in the zucchini rounds, chopped red bell pepper, and chopped onion. Sauté for 5-6 minutes until the vegetables soften and begin to caramelize.
  5. Cook Sausage: Add the smoked sausage slices to the vegetables and cook for 4-5 minutes until the sausage is heated through and slightly browned, enhancing its smoky flavor.
  6. Add Seasonings: Sprinkle garlic powder, smoked paprika, black pepper, salt, optional crushed red pepper flakes, and dried oregano over the cooked ingredients. Stir well to evenly coat and combine the flavors.
  7. Combine and Finish: Return the cooked potatoes back to the griddle with the sausage and vegetable mixture. Toss all ingredients together and cook for an additional 2-3 minutes to allow the flavors to meld perfectly.

Notes

  • You can substitute smoked sausage with kielbasa or andouille sausage for a slightly different flavor profile.
  • Adjust crushed red pepper flakes according to your spice preference or omit for a milder dish.
  • Use a mandoline slicer for thin, even potatoes to ensure they cook evenly and quickly.
  • If you don’t have a Blackstone griddle, a large cast iron skillet or frying pan over medium-high heat works well.
  • Serve with a side of fresh greens or crusty bread for a complete meal.
