Instructions
- Preheat Griddle: Preheat your Blackstone griddle to medium-high heat and add 1 tablespoon of olive oil or cooking oil to the surface to prevent sticking.
- Cook Potatoes: Add the thinly sliced Yukon gold potatoes and cook for 8-10 minutes, stirring occasionally until they turn golden brown and are tender inside. This creates a crispy yet soft texture.
- Set Potatoes Aside: Remove the cooked potatoes from the griddle and set them aside on a plate to keep warm while you cook the other ingredients.
- Sauté Vegetables: Add the remaining tablespoon of oil to the griddle and toss in the zucchini rounds, chopped red bell pepper, and chopped onion. Sauté for 5-6 minutes until the vegetables soften and begin to caramelize.
