Instructions
- Prepare the Oven and Pan: Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking pan with cooking spray or butter to prevent sticking. Set aside for later use.
- Cook the Apple Filling: In a medium saucepan, combine brown sugar, water or apple juice, cornstarch, lemon juice, vanilla extract, ground cinnamon, ground nutmeg, and salt. Stir until cornstarch is dissolved. Add peeled and sliced apples. Cook over medium heat for 3–5 minutes, stirring gently until apples begin to soften and mixture thickens. Taste and adjust lemon juice if needed for brightness.
- Layer the Apple Mixture in the Pan: Pour the cooked apple filling evenly into the prepared baking pan, spreading it into an even layer for uniform baking.
- Prepare and Add the Cobbler Topping: In a large bowl, whisk together flour, granulated sugar, baking powder, and salt. Pour in milk and melted butter, stirring just until combined—avoid overmixing to keep topping tender. Pour batter evenly over apples. Sprinkle with ground cinnamon and optionally some coarse sugar for extra crunch.
