Chicken:
- 2 x 220g/7oz chicken breast, skinless, boneless
- 1/4 tsp cooking/kosher salt
- 1/2 tsp smoked paprika (or ordinary paprika)
- 1 tbsp extra-virgin olive oil
Stuffing:
- 60g/ 2 oz cream cheese
- 1/2 cup mozzarella cheese, shredded (or other cheese)
- 1/4 cup parmesan, finely shredded
- 2 jalapeños, deseeded and finely diced
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 1/2 tsp cooking/kosher salt
Instructions
- Cut pockets into the chicken breasts: Cut pockets into each chicken breast, taking care not to cut all the way through.
- Prepare the stuffing: Microwave the cream cheese to soften, then mix it with the other jalapeño popper stuffing ingredients.
- Stuff and seal the chicken: Stuff the chicken pockets with the filling, then seal each chicken breast with toothpicks. Sprinkle with paprika and salt.
- Sear the chicken: Sear the chicken in an oven-proof skillet until golden on both sides.
- Bake: Transfer the skillet to the oven and bake the chicken until cooked through.
- Rest and serve: Allow the chicken to rest before serving.
