Crispy Potatoes

  • 800g uncooked potatoes, cubed
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp mixed herbs
  • 1 tsp chili flakes
  • 1 tsp paprika

Creamy Garlic Parmesan Sauce

  • 120ml milk (any type)
  • 100g light cream cheese (Philadelphia Lightest)
  • 40g grated Parmesan
  • Salt, garlic, and mixed herbs to taste
  • 50g shredded mozzarella (or any low-fat cheese)
  • Fresh parsley for garnish

Instructions

  1. Cook the potatoes: Preheat your air fryer to 200°C (400°F) or oven to the same temperature. Toss the cubed potatoes with salt, garlic powder, mixed herbs, chili flakes, paprika, and a little olive oil or spray with cooking spray for moisture. Air fry for 18-20 minutes or bake for 20-23 minutes until golden and crispy, shaking or stirring halfway through cooking.
  2. Cook the chicken: While the potatoes cook, heat 2 tsp of olive oil in a medium pan over medium heat. Add the cubed chicken seasoned with garlic, onion powder, mixed herbs, chili flakes, paprika, and salt. Sauté for 5-6 minutes, stirring occasionally, until the chicken is cooked through and lightly browned.
  3. Make it creamy: Reduce the heat to low. To the cooked chicken, add the milk and light cream cheese. Stir continuously until the cream cheese melts and you achieve a smooth, creamy sauce. Add extra seasoning with salt, garlic powder, and mixed herbs as needed to taste.
  4. Combine and melt: Gently fold in the crispy potatoes with the creamy chicken mixture. Sprinkle the shredded mozzarella evenly on top, cover the pan with a lid, and let it melt for 4-5 minutes over low heat until the cheese is bubbly and melted.
