Ingredients

Scale

Spices & Seasonings

  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Oregano
  • 1 tsp Thyme
  • 1 tsp Paprika
  • 1 tsp Chilli Powder
  • 1.5 tsp Cajun Seasoning Mix (for marinating)
  • 0.5 tsp Cajun Seasoning Mix (for cooking rice)
  • 0.5 tsp Cajun Seasoning Mix (for sauce)

Protein & Dairy

  • 800 g Chicken Breast (cut into halves)
  • 25 g Grass Fed Butter (for cooking chicken)
  • 15 g Grass Fed Butter (for sauce)
  • 150 g Light Cream Cheese
  • 40 g Parmesan Cheese
  • 250 ml Milk

Vegetables & Others

  • 1 Medium Red Onion (chopped)
  • 45 Garlic Cloves (chopped)
  • 2 tsp Olive Oil
  • Fresh Parsley (for garnish)
  • Day-old cooked rice (quantity not specified, estimate about 250-300 g cooked rice as base)

Instructions

  1. Marinate the Chicken: Combine 1.5 tsp Cajun Seasoning Mix with 2 tsp olive oil and thoroughly coat the chicken breast pieces. Refrigerate overnight in an airtight glass container to absorb maximum flavor.
  2. Cook the Chicken: Heat a pan over medium-high heat and melt 25 g grass-fed butter. Cook the marinated chicken until it develops a crispy, golden crust. Once cooked, remove and let rest for a few minutes before slicing into strips.
  3. Sauté Aromatics: In the same pan, add the chopped red onion and garlic cloves. Sauté until fragrant and translucent to build a flavor base.
  4. Add Cajun Seasoning and Rice: Sprinkle the remaining 0.5 tsp Cajun Seasoning Mix into the pan, then add the day-old cooked rice. Stir well until the rice is evenly coated with spices and onion-garlic mixture.
  5. Make the Creamy Sauce: Lower the heat and melt 15 g grass-fed butter in the pan. Add 0.5 tsp Cajun Seasoning Mix, then slowly whisk in 250 ml milk. When warmed through, add 150 g light cream cheese and 40 g Parmesan. Stir continuously with a balloon whisk until the sauce is smooth and creamy without lumps.
  6. Assemble the Dish: Plate the Cajun-seasoned rice as a base, top with the sliced golden chicken strips, and generously drizzle the creamy cheese sauce over the top. Garnish with freshly chopped parsley for a vibrant finish.

Notes

  • Marinating chicken overnight enhances the depth of Cajun flavors.
  • Using a cast iron skillet helps in achieving a superior golden crust on chicken.
  • Day-old rice works best to prevent mushiness when reheated and mixed with sauce.
  • A balloon whisk ensures a lump-free creamy sauce texture.
  • Adjust the amount of Cajun seasoning to your spice tolerance.
  • This recipe pairs well with a simple green salad or steamed vegetables for a balanced meal.
