- 3–4 large peaches, peeled, pitted, and sliced
- 1/2 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
For the Crumb Topping:
- 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, melted
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving overhang for easy removal.
- Make the Crust: Combine flour, sugar, and salt in a bowl. Cut in cold butter until mixture resembles coarse crumbs. Press into pan and bake for 15–18 minutes until lightly golden. Cool slightly.
- Prepare Filling: In a bowl, toss peach slices with sugar, flour, lemon juice, and vanilla. Let sit while you make the topping.
- Make Crumb Topping: In another bowl, mix flour, sugars, cinnamon, and salt. Stir in melted butter until crumbs form.
- Assemble: Spread peach filling over crust. Top evenly with crumb mixture.
- Bake: Bake 45–50 minutes until golden and bubbly. Cool completely before slicing.
- Serve: Cut into squares and enjoy plain or with ice cream. Store leftovers in fridge or freeze for later.
