Instructions

  1. Prepare the Oven and Muffin Tin: Preheat your oven to 350 degrees Fahrenheit. Line a muffin tin with 10 liners and lightly spray each with oil to prevent sticking.
  2. Mix the Wet Ingredients: In a large mixing bowl, whisk together mashed bananas, eggs, honey, and vanilla essence until smooth and well combined.
  3. Combine Dry Ingredients and Add Mix-Ins: Gradually whisk almond flour, oat flour, protein powder, baking powder, cinnamon, and salt into the wet mixture until the batter is smooth. Gently fold in chocolate chips or chopped walnuts if using.
  4. Fill Muffin Liners and Bake: Spoon the batter into the prepared muffin liners, filling each about three-quarters full. Bake in the preheated oven for 18-24 minutes, or until a toothpick inserted into the center comes out clean.
  5. Cool and Serve: Remove the muffins from the oven and allow them to cool completely in the tin before removing from liners to avoid sticking. Enjoy warm or at room temperature.
