  • 1 cup Oreo Crumbs (about 1011 Oreos processed)
  • 2 1/2 tbsp Butter, melted

Cheesecake Filling

  • 2 (8 oz) packages Cream Cheese, softened
  • 1/2 cup Sugar
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • Neon Green Food Coloring, to desired color

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners to prepare for the mini cheesecakes.
  2. Prepare Crust: Pulse about 10-11 Oreos in a food processor until fine crumbs form. Add the melted butter and pulse again until the crumbs are evenly moistened.
  3. Form Crust Bases: Divide the Oreo crumb mixture evenly among the cupcake liners and press down firmly to form a compact crust layer in each cup.
  4. Make Cheesecake Filling: In a medium bowl, beat the softened cream cheese and sugar until completely smooth and creamy. Add in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Add Color: Mix neon green food coloring into the cheesecake batter gradually until the desired vibrant Grinch-green shade is achieved.
  6. Fill Cupcake Liners: Spoon about 1/4 cup of the green cheesecake mixture evenly into each prepared liner over the crust.
  7. Bake: Place the pan in the oven and bake for 15-17 minutes. The centers should still appear slightly jiggly but will firm up as they cool.
  8. Cool and Chill: Remove the cheesecakes from the oven and let them cool completely in the pan. Then refrigerate for several hours or until fully set and firm.
  9. Add Toppings: Once chilled, top each mini cheesecake with whipped cream and sprinkles, if desired, for an extra festive touch.
