For the Chicken
- 1 tablespoon avocado oil or olive oil
- 450 grams boneless, skinless chicken breast, butterflied or pounded to 1.25 cm thickness
- 1 tablespoon Italian seasoning
- 0.5 teaspoon paprika
- Salt, to taste
- Freshly ground black pepper, to taste
For the Pasta and Sauce
- 1 tablespoon avocado oil or olive oil
- 1 tablespoon unsalted butter
- 0.5 large yellow onion, diced (approximately 1 cup)
- 4 to 6 large garlic cloves, minced
- 225 grams dry penne pasta
- 480 millilitres chicken broth
- 100 grams finely grated Parmesan cheese
- 120 millilitres heavy cream
- 2 tablespoons chopped fresh parsley
Instructions
- Prepare the Chicken: Mix together Italian seasoning, paprika, salt, and pepper. Pat chicken breasts dry with paper towels and rub seasoning onto both sides.
- Sear the Chicken: Cook seasoned chicken in a pan with oil until golden brown and cooked through. Rest the chicken.
- Start the Sauce Base: Sauté onion and garlic in oil and butter until fragrant.
- Deglaze and Simmer Pasta: Add chicken broth and pasta to the pan, simmer until pasta is al dente.
- Finish the Sauce: Stir in Parmesan, cream, and parsley until sauce thickens.
- Combine and Serve: Slice chicken, add to the pan with pasta, toss, and serve hot.
Notes
- Grate parmesan just before using for best melt and flavor.
- Do not rinse pasta after cooking to retain starch for thickening the sauce.
