For the Chicken

  • 1 tablespoon avocado oil or olive oil
  • 450 grams boneless, skinless chicken breast, butterflied or pounded to 1.25 cm thickness
  • 1 tablespoon Italian seasoning
  • 0.5 teaspoon paprika
  • Salt, to taste
  • Freshly ground black pepper, to taste

For the Pasta and Sauce

  • 1 tablespoon avocado oil or olive oil
  • 1 tablespoon unsalted butter
  • 0.5 large yellow onion, diced (approximately 1 cup)
  • 4 to 6 large garlic cloves, minced
  • 225 grams dry penne pasta
  • 480 millilitres chicken broth
  • 100 grams finely grated Parmesan cheese
  • 120 millilitres heavy cream
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Prepare the Chicken: Mix together Italian seasoning, paprika, salt, and pepper. Pat chicken breasts dry with paper towels and rub seasoning onto both sides.
  2. Sear the Chicken: Cook seasoned chicken in a pan with oil until golden brown and cooked through. Rest the chicken.
  3. Start the Sauce Base: Sauté onion and garlic in oil and butter until fragrant.
  4. Deglaze and Simmer Pasta: Add chicken broth and pasta to the pan, simmer until pasta is al dente.
  5. Finish the Sauce: Stir in Parmesan, cream, and parsley until sauce thickens.
  6. Combine and Serve: Slice chicken, add to the pan with pasta, toss, and serve hot.

Notes

  • Grate parmesan just before using for best melt and flavor.
  • Do not rinse pasta after cooking to retain starch for thickening the sauce.
