For the Potatoes:
- 1 lb baby potatoes, halved or quartered
- 3 tbsp butter, divided
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper, to taste
For the Steak:
- 1 lb sirloin steak, cut into bite-sized pieces
- 1 tbsp olive oil
- 4 cloves garlic, minced
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare potatoes: In a large skillet over medium heat, add 1 tbsp butter and 1 tbsp olive oil. Add potatoes, season with salt, pepper, rosemary, and thyme. Cook for 10–12 minutes until fork-tender and golden. Remove from skillet and set aside.
- Sear steak: In the same skillet, add 1 tbsp butter. Add steak bites in a single layer (do not overcrowd). Sear for 2–3 minutes per side until browned and cooked to your liking. Remove and set aside.
- Make garlic butter: Reduce heat, add the remaining 1 tbsp butter and garlic. Sauté for 1 minute until fragrant.
- Combine & serve: Return steak and potatoes to the skillet. Toss everything in the garlic butter. Garnish with chopped parsley and serve warm.
Notes
- You can customize the seasoning to your preference by adding additional herbs or spices.
- Ensure not to overcrowd the skillet when searing the steak to achieve a nice brown crust.
