Bars:

  • 1 cup grated zucchini
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour

  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves

Frosting:

  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat oven and prepare pan: Preheat oven to 350°F (175°C) and grease/flour a 9×13 inch baking pan.
  2. Cream butter and sugar: In a large bowl, cream butter and sugar until light and fluffy.
  3. Add eggs and vanilla: Beat in eggs one at a time, then stir in vanilla.
  4. Combine dry ingredients: In a separate bowl, whisk flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  5. Combine wet and dry ingredients: Gradually add dry mix to wet mix, stirring until just combined.
  6. Fold in zucchini: Gently fold in grated zucchini.
  7. Bake: Pour batter into pan, bake for 25-30 mins until a toothpick comes out clean.
  8. Cool bars: Let bars cool in the pan on a wire rack.
  9. Prepare frosting: Mix powdered sugar and milk until smooth.
  10. Frost bars: Spread frosting over cooled bars.
