  • Yield: 4 servings 1x

Description

Forgotten Chicken and Rice is a comforting and easy one-pan casserole blending tender chicken breasts with creamy soups and Minute rice. This simple oven-baked dish combines savory flavors from cream of chicken and mushroom soups, onion soup mix, and butter, resulting in a hearty meal perfect for busy weeknights.

Ingredients

Scale

Meat

  • 1 lb boneless, skinless chicken breasts

Grains

  • 2 cups Minute rice (white or brown)

Soups

  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup

Liquids

  • 1 can (10.5 oz) water

Other

  • 1 tbsp butter
  • 1 envelope Lipton onion soup mix
  • Optional: shredded cheese for topping

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F and grease a 9×13-inch baking pan evenly with butter to prevent sticking.
  2. Mix Soups and Rice: In a medium mixing bowl, combine the cream of chicken soup, cream of mushroom soup, water, and Minute rice. Stir well until all ingredients are fully mixed.
  3. Assemble Dish: Pour the rice and soup mixture evenly into the prepared baking pan. Place the boneless, skinless chicken breasts evenly on top of the rice layer.
  4. Add Seasoning: Sprinkle the Lipton onion soup mix evenly over the chicken breasts to add a flavorful crust during baking.
  5. Bake Covered: Cover the baking pan tightly with aluminum foil and bake in the preheated oven for 1 to 1½ hours, or until chicken is thoroughly cooked and rice is tender.
  6. Optional Cheese Topping: For a cheesy finish, remove the foil during the last 10 minutes of baking and sprinkle shredded cheese over the chicken and rice. Bake uncovered until the cheese is melted and bubbly.
  7. Rest and Serve: Remove the dish from the oven and let it stand for 5 minutes before serving directly from the pan to allow flavors to meld.

Notes

  • You can use either white or brown Minute rice according to your preference.
  • Adding shredded cheese in the last 10 minutes is optional but enhances flavor and texture.
  • Make sure to cover tightly with foil to keep moisture in and prevent the chicken from drying out.
  • This recipe is versatile—feel free to add vegetables like peas or carrots into the rice mixture for extra nutrition.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
