			Breakfast Sausage and Gravy
- 1 lb Breakfast Sausage
- 1/4 cup sausage drippings (add butter if you don’t have enough drippings)
- 1/4 cup flour
- 2 cups Milk
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon pepper (or to taste)

- 8 Eggs
- 8 oz Mild Cheddar Cheese (thin sliced)
Instructions
- Cook Sausage: Cook the breakfast sausage in a cast iron pan over medium heat until well done and fully cooked through. Remove the cooked meat from the pan and set aside, pouring off all but 1/4 cup of the fat drippings in the skillet.
- Make Roux: To the reserved sausage drippings, add the flour and cook over medium heat, stirring constantly for 5 to 10 minutes or until the mixture begins to turn golden brown. This process burns off the raw flour taste and is essential before adding liquid.
- Add Milk and Season: Slowly pour in the milk while stirring constantly to prevent lumps. Add salt and pepper to taste. Continue cooking and stirring until the gravy thickens and reaches a boil.
- Toast English Muffins: While the gravy is cooking, lightly toast the English muffins in a toaster until just golden and crisp.
- Scramble Eggs: In a non-stick skillet, scramble the eggs, optionally adding a small dash of milk to make them fluffier. Cook until eggs are set but still moist.
- Preheat Broiler and Assemble: Turn your oven broiler on to high and place a baking sheet ready for the pizzas. Assemble each pizza by spooning the sausage gravy over the toasted English muffin halves, then topping with scrambled eggs, a slice of mild cheddar cheese, and cooked breakfast sausage.
- Broil to Finish: Place the baking sheet under the broiler for a few minutes until the cheese is bubbly and melted, watching closely to avoid burning.
