Description

This Easy Sweet Potato Egg Casserole is a nutritious and delicious breakfast dish combining sweet potatoes, turkey sausage, and eggs baked together to create a hearty meal. It’s perfect for a protein-packed start to your day and can be customized with plant-based milk for a dairy-free option.

Ingredients

Scale

Vegetables and Aromatics

  • 2 tablespoons avocado oil
  • 1/2 large yellow onion, chopped
  • 1 green bell pepper, chopped
  • 5 cups cubed sweet potatoes
  • 3 garlic cloves, minced

Protein

  • 1 pound turkey sausage
  • 10 eggs

Dairy and Seasoning

  • 1/2 cup milk (plant-based milk can be substituted)
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup grated mozzarella cheese

Instructions

  1. Preheat Oven and Prepare the Baking Dish: Preheat your oven to 350°F (175°C). While the oven is heating, chop your vegetables. Grease a 9×13-inch casserole dish to prevent sticking during baking.
  2. Cook the Vegetables: Heat avocado oil in a Dutch oven or large saucepan over medium heat. Add the chopped onion, green bell pepper, and cubed sweet potatoes. Cook for 8-9 minutes, stirring occasionally until vegetables begin to soften. Add minced garlic during the last 1-2 minutes. Remove cooked vegetables and evenly spread them in the prepared casserole dish.
  3. Cook the Sausage: In the same pan, sauté the turkey sausage over medium heat. Break it into small pieces as it cooks and ensure it’s fully cooked through. Once done, add the sausage to the casserole dish with the vegetables and stir to combine.
  4. Prepare the Egg Mixture: In a mixing bowl, whisk together the eggs, milk, dried thyme, salt, pepper, and grated mozzarella cheese until smooth and well combined.
  5. Combine and Bake: Pour the egg mixture evenly over the sausage and vegetable mixture in the casserole dish. Stir gently to distribute the egg mixture. Bake in the preheated oven for 40-45 minutes, or until the center is firm. Cover loosely with foil if the top browns too quickly.
  6. Cool and Serve: Remove the casserole from the oven and let it cool for about 15 minutes to allow flavors to set and make cutting easier. Serve warm and enjoy your hearty breakfast casserole.

Notes

  • Substitute plant-based milk for dairy milk to make the dish dairy-free.
  • Can be prepared a day ahead and refrigerated before baking; increase baking time by 5-10 minutes if baking from cold.
  • Add your favorite herbs or hot sauce for extra flavor.
  • For a vegetarian version, omit sausage and add beans or tofu.
  • Use a non-stick spray instead of avocado oil if preferred for greasing the dish.
