Instructions

  1. Cook the Ground Beef: In a skillet over medium heat, crumble the lean ground beef with a wooden spoon as it cooks. Once fully browned, drain any excess grease. Add taco seasoning and 2/3 cup water, then stir to combine and let simmer until the liquid reduces slightly and flavors meld.
  2. Crisp the Tortillas: Heat 1 tablespoon oil in a small skillet over medium-high heat. Once hot, fry each corn tortilla one at a time until golden brown and slightly crispy on both sides, flipping halfway through. Transfer cooked tortillas to a paper towel-lined plate to drain excess oil.
  3. Assemble the Mexican Pizza: On a baking sheet, lay one crispy corn tortilla and spread a thin layer of red enchilada sauce on top. Next, spread a layer of refried beans, then spoon some seasoned taco meat evenly over the beans. Sprinkle a generous amount of shredded cheddar cheese over this layer. Place a second corn tortilla on top, then spread more enchilada sauce and add more shredded cheese to create a cheesy top layer.
  4. Bake the Pizza: Preheat the oven to 400°F (200°C). Bake the assembled Mexican pizzas for about 10 minutes or until the cheese is melted and bubbly and the layers are heated through.
