Ingredients

  • 1 lb lean ground beef
  • 1 packet taco seasoning (or homemade)
  • 2/3 cup water (158g)
  • 1 Tablespoon oil
  • 20 corn tortillas
  • 2 cups refried beans (260g or 16 oz can)
  • 1 1/4 cups red enchilada sauce (240g or 10 oz can)
  • 2 cups shredded cheddar cheese (226g)
  • 1 Roma tomato, diced
  • 1/2 cup sliced olives (71g)
  • 3 green onions, chopped
  • Sour cream for garnish (optional)

Instructions

  1. Step 1: In a skillet, cook the ground beef over medium heat, breaking it into small pieces with a wooden spoon. Once browned, drain any excess grease. Add the taco seasoning and water, stirring to combine. Let it simmer until the sauce thickens slightly.
  2. Step 2: Heat the oil in a small skillet over medium-high heat. Fry the corn tortillas one at a time until golden and slightly crisp on both sides, flipping halfway through. Transfer to paper towels to drain excess oil.
  3. Step 3: To assemble, spread a thin layer of enchilada sauce on one tortilla. Add a layer of refried beans, then spoon some taco meat over the beans. Sprinkle with shredded cheddar cheese and top with a second tortilla. Spread more enchilada sauce and cheese over the top.
  4. Step 4: Place the assembled pizzas on a baking sheet and bake in a preheated 400°F oven for about 10 minutes, or until the cheese is melted and bubbly.
  5. Step 5: Remove from the oven and garnish with sliced olives, diced tomatoes, chopped green onions, and a dollop of sour cream if desired. Cut into wedges and serve warm.

Tips & Variations

  • For extra spice, add chopped jalapeños or a dash of hot sauce to the taco meat.
  • Use flour tortillas instead of corn if you prefer a softer texture.
  • Make it vegetarian by substituting the ground beef with sautéed mushrooms or black beans.
  • Leftover pizzas can be reheated in the oven to keep the tortillas crisp.

Storage

Store leftover Mexican pizza in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F until warmed through and the cheese is melty to maintain crispness. Microwaving can make the tortillas soggy, so oven reheating is preferred.

How to Serve

The dish shows slices of quesadillas arranged on a wooden board over a white marbled surface. Each quesadilla slice has a folded yellow corn tortilla base filled with a layer of browned ground meat and another layer of melted orange-yellow cheddar cheese with gooey, slightly browned texture. On top of the cheese layer, there are dollops of white sour cream, scattered chunks of diced red tomatoes, green jalapeño pieces, white onion bits, small black olive rings, and tiny green herb leaves, all lightly sprinkled with black pepper. Some extra diced tomato and jalapeño pieces are scattered on the board around the slices, adding a fresh touch. photo taken with an iphone --ar 4:5 --v 7

FAQs

Can I make this recipe ahead of time?

Yes, you can assemble the pizzas ahead and refrigerate them before baking. Just add the cheese right before baking to avoid sogginess, then bake as directed.

What can I use instead of refried beans?

You can substitute refried beans with black beans mashed lightly, or use a bean dip of your choice. This will change the texture slightly but still adds great flavor.

Meat and Seasoning

  • 1 lb lean ground beef
  • 1 packet taco seasoning (or homemade)
  • 2/3 cup water (158g)
  • 1 tablespoon oil

Base and Layers

  • 20 corn tortillas
  • 2 cups refried beans (260g or 16 oz can)
  • 1 1/4 cups red enchilada sauce (240g or 10 oz can)
  • 2 cups shredded cheddar cheese (226g)

Toppings

  • 1 Roma tomato, diced
  • 1/2 cup sliced olives (71g)
  • 3 green onions, chopped
  • Sour cream (for garnish)

Instructions

  1. Cook the Ground Beef: In a skillet over medium heat, crumble the lean ground beef with a wooden spoon as it cooks. Once fully browned, drain any excess grease. Add taco seasoning and 2/3 cup water, then stir to combine and let simmer until the liquid reduces slightly and flavors meld.
  2. Crisp the Tortillas: Heat 1 tablespoon oil in a small skillet over medium-high heat. Once hot, fry each corn tortilla one at a time until golden brown and slightly crispy on both sides, flipping halfway through. Transfer cooked tortillas to a paper towel-lined plate to drain excess oil.
  3. Assemble the Mexican Pizza: On a baking sheet, lay one crispy corn tortilla and spread a thin layer of red enchilada sauce on top. Next, spread a layer of refried beans, then spoon some seasoned taco meat evenly over the beans. Sprinkle a generous amount of shredded cheddar cheese over this layer. Place a second corn tortilla on top, then spread more enchilada sauce and add more shredded cheese to create a cheesy top layer.
  4. Bake the Pizza: Preheat the oven to 400°F (200°C). Bake the assembled Mexican pizzas for about 10 minutes or until the cheese is melted and bubbly and the layers are heated through.
  5. Garnish and Serve: Remove from oven and top with sliced olives, diced Roma tomatoes, chopped green onions, and a dollop of sour cream. Cut into wedges and serve warm.
