- 90 ml (⅓ cup + 2 tsp) thickened or whipping cream (minimum 35% fat)
- 200 g (7 oz) dark cooking chocolate (40% cocoa solids), finely chopped
- 1 tablespoon instant coffee granules

- 125 g (4.5 oz) milk cooking chocolate
Instructions
- Prepare the dish: Line a small, flat dish with non-stick baking paper to prevent sticking and ensure easy removal of the truffle mixture.
- Heat the cream: In a small saucepan, warm the cream over low heat until it is just below boiling point to avoid scalding while preparing the base for the truffles.
- Make the truffle mixture: Turn off the heat, then add the chopped dark chocolate and instant coffee granules to the cream. Stir until the mixture is smooth and fully combined.
- Chill the mixture: Pour the mixture into the lined dish and refrigerate for about 2 hours or until it firms up enough to handle.
- Form truffle balls: Scoop about 3 teaspoons of the chilled mixture and roll it into small balls. Place each ball on a lined baking tray and chill for another 30 minutes to firm up.
- Melt the coating chocolate: Melt the milk cooking chocolate over simmering water, stirring occasionally to ensure even melting, then allow it to cool for 15 minutes to reach the right consistency for dipping.
- Coat the truffles: Dip each truffle ball into the melted milk chocolate to fully coat, then place them back on the tray to set.
- Set the coating: Refrigerate the coated truffles for 30 minutes or until the chocolate coating is firm. Store the finished truffles in an airtight container in the fridge until ready to serve.
